The main application of Glycyrrhizic Acid

1) In food industry: 

1. Soy sauce: in addition to improving the saltiness to improve the inherent taste of soy sauce, it can also eliminate the bitter taste of saccharin and have a synergistic effect on chemical flavoring agents. 

2. Pickles: It is used with saccharin in the brine method of pickles, which can eliminate the bitter taste of saccharin. In the curing process, it can overcome the shortcomings of fermentation rind, discoloration and hardening caused by less sugar. 

3. Seasoning: It can add pickling seasoning solution, seasoning powder or temporary seasoning when eating, which can increase sweetness and reduce the strange taste of other chemical seasoning agents. 

4. Bean sauce: pickled small sauce herring using it can increase the sweetness and make the taste even.

 

2) In pharmaceuticals industry:

Antiviral effect:
It has been clinically used to treat chronic hepatitis.
It can significantly inhibit HIV replication in blood mononuclear cells of HIV-positive patients in vitro.
It also reduced morbidity and mortality in mice infected with lethal doses of the flu virus. Cinatl et al. compared the inhibition of riboside triazole, bacteriophenic acid, pyrazofuranotocin and glycyrrhizin on FFM-1 and FFM-2 of two SARS coronaviruses, and found that Glycyrrhizic acid had the strongest inhibition on viral replication.

It has a strong antibacterial and anti-inflammatory function, often used in the treatment of mucosal diseases, in oral hygiene products to prevent caries, mouth ulcer and so on.
